We are on year two of having a garden and this weekend we had our first harvest. Lots of cucumbers, a yellow squash, sugar snap peas, green beans and one gigantic zucchini! Look at this whopper:
I know it’s not uncommon for them to get this big, but I am still proud of our jumbo zuch! Now…what does one do with a vegetable of that proportion?! My friend Kristen suggested a tasty stuffed zucchini bake (ground beef, shallots, red peppers, shredded cheese and zucchini pulp, bake it in the shell of the zucchini with melted shredded cheese on top). I think that should feed the entire family. Yum! I also found an entire page of cucumber recipes (because we have a ton of those too). Click here for some creative, healthy ideas. Gardens are so much fun, and we still have our carrots and more squash and tomatoes to collect too. I need to start canning!
