Another weekend, another busy few days of getting our home ready for the big event:) The weekends are zipping by way too fast these days. Especially with the 70-80 degree days. Wow..thank you, Lord! Anyway, thankfully we had some fun family time, but also mixed with lots of laundry, cleaning and more baby prep. I made a few freezer meals for the family for when I’ll be in the hospital. I’m sure they would be a-okay going for McDonald’s or Chick-fil-A, but not knowing when our precious guy will get here, I wanted to make it easier for Jim to have some healthy options. First up, is Chicken Spaghetti:
Picture and recipe courtesy of The Pioneer Woman. It’s healthy (I used wheat pasta and lean chicken breast), easy peasy! I actually doubled the recipe so we could have one meal this week, and froze the other.
I also made lasagna, and I’m hoping to make a few more next week, just to make life a little easier those first few days/weeks home. The Duggar’s Tater Tot Casserole is on the list, hopefully I can get that one done at some point.
On another note, Karolina is getting oh-so-close to taking her first steps! It’s been such an exciting family event to see her become more independent, and get VERY close to walking. My guess is, she’ll be ready right about the time her baby brother arrives, and will be off and running right when she knows I’m not looking.:) I’ll keep you posted!
