I’ve been trying to play catch up with my half marathon training, and that meant shooting for 10 miles this weekend! Although I haven’t been pacing at the ideal frequency of training runs, the distance has been doable (my last long run was 8 miles). Still, it’s been a long time since I attempted 10, and that was before 5 kids and my adjusted schedule of waking up at 2am (oh boy, here come the excuses)!:) Wouldn’t you know it though. Today was one of those magical mornings. Ideal weather, birds singing, and perfectly peaceful. It was a 10! New shoes too. Although judging from my squished toes and bloody toenail afterwards, I’m thinking I should’ve gotten the next half size up (ouch).
Another perfect 10 is this “Overnight, No-Cook Oats” breakfast recipe. The ingredients are completely healthy and it’s a great eat-on-the-go option. It’s Jim’s #1 request right now and so easy! I love that it includes Chia seeds; and the greek yogurt almost gives it a pudding consistency. It’s also very filling.
This particular recipe is for the Blueberry Overnight Oats. Layer your Mason jar with skim milk (or almond milk), oats, yogurt, blueberries, syrup and chia
Mix and refrigerate. Yum! Click here for the recipe (and a variety of other flavors).
I hope your weekend and Memorial Day holiday is blessed and beautiful! Len and I had the opportunity to interview Stephen Mansfield about this book “The Faith of the American Soldier.” If you want to hear a moving perspective about the challenges and triumphs of our servicemen and women, check out our interview here. Great insight from Stephen.
